Elegant, with juicy fruit flavours and a restrained mineral chalky finish.

Region: 100% Five Ashes Vineyard, Margaret River.
Colour: A youthful pale straw lemon in appearance.
Bouquet: The nose exudes fresh honey and glazed pears on a bed of mango cream, with marzipan overtones and an attractive spiciness from barrel fermentation and maturation in French oak barriques.
Palate: The palate is very pure and focussed, with exceptional length and minerality typical for Hamelin Bay. Increased use of wild fermentation has added complexity and texture.

Vintage Characteristics: Cool elegant year.
Vinification: 100% barrel fermentation with maturation for 8 months and fortnightly battonage or lees stirring.
Cellaring Potential: Suggested best 2008; suggested maximum 2011.
Oak Treatment: 100% barrel fermented in French oak, 22% new, 22% 1 year old, balance old.
Serving Suggestion: Serve with any seafood dish, especially those with cream or lemon based sauces.
