TECHNICAL NOTES

Region: 100% Five Ashes Vineyard.
Colour: The wine has a youthful straw green colour.
Bouquet: The nose exhibits floral lime and kiwi fruits, with a hint of freshly rubbed sage and undertones of creamy vanilla bean.
Palate: The palate is fresh and zesty, with excellent minerality, a juicy mid-palate and a long lingering finish as is typical for the Hamelin Bay Sauvignon Blanc. Maturation on lees and barrel fermentation have been used to add palate depth and mouth feel.

Vintage Characteristics: Warm dry vintage.
Vinification: Free-run juice was fermented in 86.5% Stainless steel and 13.5% barrel using PdM and VL3 yeasts. A balance between complex and clean ferments is the key to this wine.
Cellaring Potential: Suggested best fom September 2007 to 2008/9;
Oak Treatment: 7% New and 6.5% one year old French oak barriques matured on yeast lees for 6 weeks prior to blending. French oak is judiciously used to provide support to the wines fruit, and remain undetectable in the background.
Serving Suggestion: Enjoy with freshly shucked oysters or pan seared scallops.
